Avocado Beet Salad 🌱🥑💕 February is one of my favorite months of the year, for so many reasons. ✨ We’re deep into the new year but yet have the rest of the year to look forward to - all the beautiful days ahead, the opportunities that are in the works, and all the growth to come. It can also be challenging when we feel we’re not moving towards our goals “fast enough” or maybe haven’t even started. But, I say this to remind myself, be kind to yourself. Life is such a beautiful journey and we get a choice to show up every single day to make it a little better, tweak things, take new chance, step into our fear, to help someone in need, to show up, and to live our best life, a vibrant life - every single day. No marinara? No problem 😎 How about black bean sauce?! Seriously, this tastes soooo good. I used @betterbeanco Cuban black beans, @simplemills grain free flat bread, @heidihoorganics cheese, arugula, avocado and lemon pepper to create this beauty. To veganize the @simplemills crust, I use extra virgin Greek olive oil, red wine vinegar and water- sorry I eyeball it! I drizzled more olive oil on the top after the picture. YUM.
