Snowy Monday morning made better with this bowl 👉🏼 stovetop cacao oatmeal with caramelized banana and peanut butter 🍌 I’ve had a cold the past few days, and this was super cozy and nourishing to warm up with! Now I’m sipping on tea with honey and LOTS of water throughout the day 🍯 I might venture out for a gentle workout like walking later, but I’m going to listen to how my body feels ❤️For me, sometimes light workouts help break up congestion and gives me some energy, but never push it when you’re sick! Last night, I skipped out on my fave @corepoweryoga with Ben and friends, and it was the right decision for sure 😌I just cuddled up on the couch with some Netflix and a cup of tea 🍵 Wishing you all a great start to the week!
GOOD MORNING PORRIDGE PEEPS - long time no post! 😫✨
Been so so busy this last week with work experience (working 9-5 what a way to make a livingggg 💁🏻♀️) meaning every morning was a quick slap dash bowl o porridge in the dark. But this week I’m on half term break & im on holiday in Ireland visiting family 🇮🇪🧡
So starting this week with a twist on my fave classic bowl of warm Banana Porridge topped with Peanut Butter & Walnuts - the twist? Well white bowl with a black background instead of the other way round 🍌🥜😉

CHOC PEANUT BUTTER PANCAKES! 🍫🥜🥞
Peanut butter has been growing on me lately guys! I don’t know who I’m becoming hahahaha!
But let me just tell you, these chocolate peanut butter pancakes I made for breakfast yesterday were AMAZING! They may have been the best vegan pancakes I have ever made! Not kidding! Luckily you can make them too because I have a recipe for you all!!!
To make these indulgent pancakes you will need:
1 cup oats
1 ripe banana, mashed
1 cup plant milk - more if needed
1/4 cup buckwheat flour
2 tsp cacao powder
2 tsp peanut butter
1 tbsp chia seeds
Blend oats into fine flour. Add other ingredients in high speed blender or bowl and mix until well combined. Pour batter into pan and cook pancakes for 3-4 minutes each side. Top with lots of peanut butter, raspberries, blueberries and cacao nibs!!!

the extent to my meal planning these days is making sure i have delicious treats to snack on all week 😎 i don’t think i’m at a point in my journey with intuitive eating to full on prep every meal, it gives me anxiety for no apparent reason lol. i rather be able to eat what i’m craving in that moment i guess. anyhow. my lil treat for this week are chocolate dipped peanut butter pretzels !! sweet, salty, delicious, easy to make and super cute 🐹
1 cup creamy peanut butter
2 tbsp earth balance butter, softened
1/2 cup powdered sugar
1/3 cup coconut or brown sugar
1/2 tsp vanilla
1 bag enjoy life chocolate chips
- in a large bowl, combine the pb + softened butter until smooth. i used a hand mixer but to each his own lol.
- stir in powdered sugar, coconut or brown sugar, and vanilla until dough forms.
- roll the pb mixture into small balls (like 1”-2”). if it’s too sticky to handle, add more powdered sugar.
- place the pb ball in between two pretzels and place on a sheet lined w parchment paper.
- freeze for 15-20 min.
- pour the chocolate chips into a microwave safe bowl and heat for 30 second intervals, stirring between each interval, until they’re melted.
- dip the pretzel bites into the chocolate halfway, place back onto the baking sheet lined w parchment paper and refrigerate for 10-15min or when chocolate is firm!
