I respect ramen to the max. Here’s what I found out. Every part of the ramen matters. Ajitama, bamboo shoots, chashu pork, broth, tare, and the noodles. When you make the food that you profess you love and know SOOO much about you can really get to understand the dish better. So here it is: Shiitake Shio ramen w triple broth and pork fat. I’m definitely going to adjust the fat content in this and make it lighter but you will see the cutie @xblueapplez grubbing on this for the next MUKBANG!
